THE FARM AND THE VARIETIES OF OLIVES

Classified among the most outstanding on the island of Ibiza, Can Miguel Guasch Extra Virgin Olive Oil has been obtained from the daily care of the olive grove since 2008. The farm is home to two varieties of olives: the Arbequina and Picual varieties. Can Miquel Guasch oil is a 100% Ibizan oil that has been produced in the property’s oil mill, ‘Es Trull de Can Miquel Guasch’, since 2010. It is considered as an ecologically produced oil: based on the optimal use of natural resources, without using synthetic chemicals or genetically modified organisms, attaining organic food while preserving the fertility of the land and respecting the environment.

Ecological extra-virgin olive oil

Arbequina variety

Limited-production organic extra-virgin olive oil, exclusively from Arbequina olives harvested at their optimum point of maturity between October and November, on the Can Miquel Guasch (Ibiza) and newly planted, drip-irrigated olive groves.

Organoleptic and sensory analysis: oil with an intense golden colour and green glints. On the nose it is very fruity, with an aroma of fresh almonds and half-ripe fruits, all in one harmonious ensemble. In the mouth it is sweet and enveloping, its bitterness is almost nil and the itch is slightly more pronounced.

Pairing: Recommended for desserts, oranges with oil, sauces, fish and seafood, always used raw or at low temperatures to achieve the highest organoleptic enjoyment. Being a variety that is not rich in antioxidants, we recommend using it within around 12–15 months from the time of its production.

This Extra-Virgin Olive Oil is presented in a dark 500 ml glass bottle with a non-refillable DOP cap. The dark glass protects the oil from light, which is one of the aspects that most affect its oxidation.

Picual variety

Limited-production organic extra-virgin olive oil, exclusively from Picual harvested at their optimum point of maturity between October and November, on the Can Miquel Guasch (Ibiza) and newly planted, drip-irrigated olive groves. Organoleptic and sensory analysis:

Organoleptic and sensory analysis: Oil with an intense green to golden colour in glint. On the nose it is medium fruity, with an aroma of freshly cut grass, leaves, stems and fig trees in less intensity, and it is persistent and harmonious. Fruits in particular bring out its green colours. In the mouth it is slightly astringent with great character and personality, its bitterness is medium and the itch appears though it is less pronounced.

Pairing: Highly recommended for salads, bread with tomato, stews and sauces, gazpacho and salmorejo and even fried foods, which it lends an exceptionally pleasant, silky flavour. It is an oil with a very high organoleptic value and, despite its very high quality, it can also be used in cooking and frying thanks to the variety that contains a high quantity of oleic acid, polyphenols and antioxidants. Given its high stability, it can be kept for 20–24 months in good conditions.

Organic Extra Virgin Olive Oil

Coupage variety

It is a selection of oils from the Picual and Arbequina varieties. The first is a very intense and strong variety, while the second is considered one of the most delicate and sophisticated varieties. With the coupage, these two varieties are “brought together” in different proportions, with the aim of perfecting and enhancing the qualities of both varieties to achieve an exquisite blend.

· Organoleptic and sensory analysis: Leaf-green oil with golden tints. On the nose, notes of freshly cut grass, tomato, green olives and hints of citrus fruits and nuts to a lesser extent. In the mouth, it is smooth, with a slight and almost imperceptible hint of bitterness and a little more piquancy. It leaves a pleasant taste, with the persistence of the olive’s fruity flavour and vague hints of spiciness. It is a medium-light, balanced and full-bodied fruity oil, combining the flavour of the two varieties of olive, which complement each other perfectly and enhance the overall quality.

· Pairing: It is ideal for dressings of any kind—in vegetable grills, pasta dishes and barbecues. It is also highly recommended for game meats, marinades and sauces with personality. As a coupage, the high oleic value and high levels of polyphenols and antioxidants found in the Picual variety ensure that the Arbequina variety oil is preserved over time, meaning that, in good conditions, it can be stored for between 15 and 20 months from its date of production.
